  • Yellow tomato gazpacho with buffalo ricotta quenelles and crunchy almonds

  • Pork ribs topped with red cabbage salad and sour cream sauce
  • Roman-style tripe with cannellini cream, pecorino flakes and mint drops
  • Seared octopus, eggplant caponata, vegan pine nut mayo
  • Viterbo potato with tuna bottarga, goat yogurt and fennel sauce
